How to Make Pancakes or Waffles

I spent years buying Ready-Made Pancake mix, where all you had to do was add water. Now, I decided to make my own. It's not that hard, and I always have the ingredients on hand. The problem is that I maybe eat only 2 pancakes, then the rest of the pancakes get frozen for a pop in the toaster later. Here lately, I have been practicing making "Blini" or "Crepes" with a bit of success.

You can make breakfast fun by pouring your pancake batter into a squeeze bottle. Make pancakes out of your child's name or make designs, or animals. I always made silver dollar size pancakes for the kids.

Pancake Syrup Tip: To make an inexpensive syrup for pancakes, save small amounts of leftover jams and jellies in a jar. Or, fruit-flavored syrup can be made by adding 2 cups sugar to 1 cup of any kind of fruit juice and cooking until it boils. See more recipes for Pancake syrup at the bottom of the page.

How to Make Pancakes

  • 2 eggs
  • 2 cups milk
  • 2 Tbsp. melted shortening or oil
  • 3 cups flour
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 2 Tbsp. sugar

Mix it altogether until smooth and pour onto hot griddle. Sometimes I make huge ones as big as my plate, but the kids always liked the Silver Dollar Pancakes, in which each pancake you pour is a little bigger than a half dollar. You can also add different fruits to the pancake batter, such as Strawberries, blueberries, or bananas, and even Chocolate Chips.

Basic Pancakes

  • 2 eggs
  • 1 c. milk
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 T. sugar

Beat eggs until foamy. Add milk and stir. Add flour, baking powder, salt and sugar. Mix well. Fry in skillet. May add a little more flour to make thicker for waffles.

Blender Pancakes

  • 1 cup milk
  • 1 egg
  • 1 tablespoon sugar
  • 1 cup flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Put all ingredients into container. Cover. Press button 6 for 15 seconds or until well mixed. Pour from container onto hot griddle about 1/4 cup for each pancake. Brown and turn to brown other side. Serve hot. Makes 10 small pancakes.

Club Soda Pancakes or Waffles

  • 2 cups biscuit mix
  • 1 egg
  • 1/2 cup oil
  • 1-1/3 cup club soda

Mix well, pour on a hot griddle for pancakes, or into waffle iron for delicious waffles. Batter can not be stored, so cook all of it at once and freeze. Then pop in toaster for a quick breakfast.

Buttermilk Pancake recipes

Sunday Morning Pancakes

  • 1 egg
  • 3/4 cups buttermilk
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 2 tbsp oil or melted butter

Beat egg with a fork. Add a little buttermilk at a time until it is all used. Add sifted dry ingredients. Mix lightly. Dribble in oil and stir lightly. Cook on hot griddle. (Do not use powdered buttermilk)

Buttermilk Pancakes

Buttermilk pancakes
  • 3 eggs
  • 1 2/3 c. buttermilk
  • 1 tsp soda
  • 1 1/2 c. flour
  • 1 T. sugar
  • 1 tsp. salt

Beat 3 eggs, add 1 2/3 c. buttermilk, Beat in 1 tsp soda, Add 1 1/2 c. flour, 1 T. sugar, 1 tsp. salt. Beat mixture well. Cook on hot griddle until golden brown. Enjoy!

Pancakes that are baked

German Pancakes 1

  • 4 eggs
  • 1/2 tsp salt
  • 2/3 cup milk
  • 3 tbsp butter
  • 2/3 cup flour

Whip eggs until lemon colored. Add milk, flour, and salt. Heat butter into square baking pan. Pour batter into pan of melted butter. Bake at 450 for 15-20 minutes. Serve in squares with syrup and powdered sugar.

German Pancakes 2

  • 6 eggs
  • 1 c. flour
  • 1 c. milk

Beat all ingredients well. Butter a 9x13 cake pan. Pour batter in greased pan. Bake for 22 min. at 450 degrees. Sprinkle on powered sugar while still very hot and serve.

Big Baked Pancakes

  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/2 c. flour
  • Dash of vanilla

Beat eggs, then add rest of ingredients and beat. Melt 1/4 cup oleo in a 9x13 inch glass pan. (I use regular cake pan and melt butter in it on burner), until it bubbles. Add batter. Don't stir. Bake 5 minutes and slam oven door, then bake an additional 10 to 15 minutes. Bake in 425 oven.

How to Make Pancake Syrup

  • 2 c. white sugar
  • 1/8 tsp. salt
  • 1 c. water
  • 1/2 tsp. maple flavoring or extract

Combine white and brown sugar in a saucepan. Add salt and water. Bring mixture to a boil. Remove from heat. Add maple flavoring or extract. Cool and serve. Tip: Use any combination of white and/or brown sugar as long as it is two parts sugar to one part water. You can also use different flavorings.

Maple Syrup

  • 1 cup water
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup corn syrup
  • 1 tsp. maple flavoring
  • 1 tbsp. butter

Boil water, sugars, and corn syrup. Add butter and flavoring. Simmer until desired thickness.

Blini Stack

I've been practicing trying to make Blini/Crepes. Here's a stack I made today. There's actually 30 Blini in that stack. It takes a good hour to cook 30 Blini.

How to make French Crepes

French Crepes

French Crepes
  • 1 egg
  • 2 Tablespoons sugar
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup flour
  • 2 Tablespoons melted butter

Beat egg, salt and sugar together. Add milk and flour. Beat until smooth. Add butter. Heat a small frying pan with a little melted butter. When hot, turn in enough batter to just cover bottom. Fry, shaking frequently, until batter is golden on bottom. Turn and brown other side.

Cooking Blini

The secret to my success, after several failures, was the size iron skillet I'm using. I tried the Teflon coated pans, an 8 inch iron skillet, but the recipe I used recommended a 5 inch iron skillet. The recipe I used is complicated and not as easy as the Crepe recipes below.

Crepes

  • 2 cups milk
  • 4 eggs
  • 1/4 tsp salt
  • 1 cup flour
  • 1/4 tsp baking powder

Beat ingredients, start at one cup of flour but you can add up to 1/2 cup more if needed for the desired consistency. Then, add baking powder. Cook on griddle, turning when sides are golden. Good with cream cheese, ice cream, cinnamon sugar, jam etc.

How to make French Toast

French Toast

  • 4-6 white bread slices
  • 1 egg
  • 1/4 cup milk
  • 2-3 tsp. sugar (add more or less depending on how sweet you want)
  • a little oil for shallow frying

In a shallow bowl beat the egg with a fork, stir in the sugar, then the milk. Beat until frothy and well mixed. Heat a tablespoon of oil in a frying pan, turn the pan to spread. Once oil is hot, on medium heat. Dip the slices of bread in the egg mixture so that both sides are covered. Then fry until both sides are golden. Take out and drain on paper towel.
Serving suggestions: with maple syrup, powdered sugar, butter, brown sugar, cinnamon sugar, or even ice cream

Tip: If you use water, instead of milk, then the bread will soak up the egg mixture better. They will also cook in butter instead of oil. You can add cinnamon sugar instead of white sugar, or a little vanilla.

Recipes for Griddlecakes

Sour Milk Griddlecakes

  • 2 1/2 cups flour
  • 2 cups sour milk
  • 1/2 teaspoon salt
  • 11/4 teaspoons soda
  • 1 egg

Mix and sift flour, salt, and soda; add sour milk, and egg well beaten. Drop by spoonfuls on a greased hot griddle; cook on one side. When puffed, full of bubbles, and cooked on edges, turn, and cook other side. Serve with butter and maple syrup.

Sweet Milk Griddlecakes

  • 3 cups flour
  • 1/4 cup sugar
  • 1 1/2 tablespoons baking powder
  • 2 cups milk
  • 1 teaspoon salt
  • 1 egg
  • 2 tablespoons melted butter

Mix and sift dry ingredients; beat egg, add milk, and pour slowly on first mixture. Beat thoroughly, and add butter. Drop by spoonfuls on a greased hot griddle; cook on one side. When puffed, full of bubbles, and cooked on edges, turn, and cook other side. Serve with butter and maple syrup.

Wheat Griddlecakes

  • 1/2 cup wheat flour
  • 3 tablespoons sugar
  • 1 cup flour
  • 1 egg
  • 3 teaspoons baking powder
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 1 tablespoon melted butter

Mix and sift dry ingredients; beat egg, add milk, and pour slowly on first mixture. Beat thoroughly, and add butter. Drop by spoonfuls on a greased hot griddle; cook on one side. When puffed, full of bubbles, and cooked on edges, turn, and cook other side. Serve with butter and maple syrup.
