Mary PickfordMary Pickford's favorite Bisquick dessert.

The third page of the 1930's Bisquick recipe book introduces Mary Pickford, along with her picture. Mary Pickford was called "America's Sweetheart." and it says, "Her latest triumph, "The Secret," is now being shown on the screens of the nation. Leslie Howard plays the leading male role in the United Artists picture.

Mary Pickford, in whose affections can never take the place of Strawberry Shortcake.

Strawberry Shortcake

2 cups Bisquick
3/4 cup cream
2 tablespoons sugar

Add sugar to Bisquick. Stir in Cream and mix well. Turn dough onto lightly floured board and knead gently to smooth up. Roll out 3/4 inch thick. For individual shortcakes cut with 3-inch cutter and bake. For one large shortcake, pat out 1/2 of dough in round 8-inch pan. Dot with butter. Place other half of dough on top. Bake in a hot oven 450 F. for 12 minutes. Split and place sweetened crushed strawberries or other fruit between layers and on top. Serve with whipped cream or as desired. Amount: 6 to 8 individual shortcakes or servings. Also see Peach Shortcake and Cookies.

Apricot Honey Shortcake

1/2 cup honey
1/4 cup finely chopped apricots

Soak dried apricots in warm water 1 hour. Then chop fine. Combine thoroughly with honey and let stand awhile to blend flavors. Make up individual Bisquick Bisquick shortcakes. When they are baked, split and butter and place Honey Apricot filling between the halves of each shortcake. Top with Honey Meringue and serve.

Honey Meringue

1 egg white
2 tablespoons honey
4 marshmallows, cut in quarters, and butter partially cooled.

Chill and use on Shortcake in place of whipped cream.
Note: This honey meringue is also delicious on hot gingerbread.
Note: The above amounts of Filling and Meringue sufficient for 6 individual shortcakes.

Loaf Cake or Cup Cakes

2 cups Bisquick
1 cup sugar
2 eggs
1 cup top milk
2 tablespoons butter
1 tsp. vanilla

Combine Bisquick and sugar. Add top milk, well beaten eggs, melted butter, and vanilla. Beat to smooth up batter. Pour quickly into greased and floured 8 inch square pan, or muffin cups. Bake square cake 30 minutes, or cupcakes 20 minutes in a moderately hot oven 400 F.

Crumb Cake

Add 1 teaspoon of cloves, 1 teaspoon of nutmeg, 1 teaspoon cinnamon to Bisquick and sugar, in cake recipe. Cut in the butter with 2 knives or a pastry blender, until finely blended. save out 1/2 cup of this mixture. Add beaten eggs and top milk to the remainder. Beat well to smooth up batter. Pour an 8 inch square pan lined with greased paper and spread the crumb mixture over the top. Bake 40 minutes in a moderately hot oven, 400 F.

Cottage Pudding

A plain Cottage Pudding can be made by making Bisquick Cake with only 1 egg. Bake in square 8 inch pan and serve hot with any desired sauce.

Pineapple Upside Down Cake

Butter a deep round 8 inch cake pan generously, using 2 tablespoons butter; line with 2/3 cup brown sugar; cut 4 slices well drained pineapple in halves and place on sugar. Prepare Bisquick cake batter and pour it over the fruit. Bake 30 minutes in a moderately hot oven, 400 F. When cake is done; turn pan upside down and let it stand for a minute or two, to allow the buttersctoch mixture to run down over the cake.
Note: Other fruit such as sliced apples, apricot halves, etc., may be used in place of the pineapple.
