in making biscuits, Bisquick offers an equally new and simple solution to
the muffin problem. Not only does it save time that was formerly required,
but it also helps you produce finished muffins just a bit more delicate
and tender."
This 1933 Bisquick recipe book is full of muffin recipes. The featured star on page twenty three is Elissa Landi.
Elissa Landi was the fascinating English girl who played the leading feminine role opposite Ronald Colman in Samuel Goldwyn's magnificent screen version "The Masquerader."
Plain Muffins
2 cups Bisquick
2 tablespoons sugar
1 cup milk
1 egg
Add sugar to Bisquick. Stir in milk and well beaten egg. Mix well and fill well greased muffin pans 2/3 full. Bake in a moderately hot oven (400 F.) for 20 minutes.Amount: 12 fluffy, high muffins.
Miss Landi's delicious variation of muffins to serve with afternoon tea is Blueberry Muffins.
Blueberry Muffins
Follow the recipe for Plain Muffins and add 1 cup of fresh blueberries to the batter; or use only 3/4 cup well-drained canned blueberries.Orange Muffins
Add 2 extra tablespoons of sugar, and 2 tablespoons grated orange rind to the Bisquick in the muffin recipe, and proceed as for plain muffins.
Date Muffins
Follow recipe for muffins and add 1 cup chopped dates to the batter. Figs, raisons, prunes or canied orange peel may be used in place of the dates for the other fruit muffins.
Berry Muffins
Follow recipe for muffins and add 1 cup of fresh berries to the batter; or use only 3/4 cup well-drained canned berries.
Cranberry Muffins
Increase sugar to 1/2 cup in Muffin
Recipe and add 1 cup cranberries, quartered or chopped coarsely.
