Broccoli Casserole Recipes

I don't seem to have broccoli in the house usually, but this year we planted some in the garden. They looked like they were not going to survive the summer, but now that a cold front has moved in, they are growing like crazy along with all the other cabbage family veggies. However, I will probably wind up making a Cream of Broccoli Soup out of them.

Easy Broccoli Casserole

  • 2 boxes chopped broccoli
  • 1/2 cup butter
  • 1/2 lb American cheese
  • 1/2 cup crackers or cornflakes.

Boil broccoli for 7 or 8 minutes. Drain and set aside. In a saucepan melt cheese with half the butter. Stir constantly, until melted. Pour into buttered casserole over broccoli. Crush crackers and mix with rest of melted butter. Pour over broccoli cheese mixture. Bake at 350 for 20 min.

Broccoli Casserole

  • 2 pkg. frozen chopped broccoli, cooked, well drained
  • 3 eggs, well beaten
  • 1 can celery soup
  • 1 cup mayonnaise
  • 1 cup grated sharp cheddar cheese
  • 1 cup buttered cracker crumbs

Spread cooked broccoli in buttered shallow baking dish. Mix eggs, mayonnaise and soup. Pour over the broccoli covering it completely. Spread on cheese, then top with cracker crumbs. Bake at 350 until brown. I often add a cooked carrot, sliced thin for color to the broccoli.

Broccoli Casserole

  • 1/2 stick butter
  • 1/3 cup chopped onion
  • 1 can mushroom soup
  • 10 oz. chopped broccoli
  • 24 oz. Cheese Whiz
  • 1 1/2 cup cooked rice

Thaw chopped broccoli. Mix all ingredients together and bake 35 minutes at 350 in a 2-quart casserole.

Broccoli Casserole

  • 2 pkg. frozen chopped broccoli (parboil as directed on pkg.)
  • 1 1/2 cup mushroom soup
  • 1 cup sharp grated cheese
  • 1 Tblsp. minced onion
  • 1 cup mayonnaise
  • salt and pepper to taste

Squeeze water out of broccoli. Mix all ingredients. Pour into casserole. Dot with butter. Cover with Ritz cracker crumbs. Bake 350 for 40 to 50 minutes. (Double this recipe and it makes a casserole 12x8x2. Serves about 15.

Broccoli Casserole

    Mix together:
  • 2 boxes frozen broccoli
  • 1 1/2 cup milk
  • 1 can mushroom soup
  • 1/2 cup Miracle Whip
  • 1 cup melted cheese

Cook and drain broccoli. Put in layers of broccoli, soup mixture, then cheese. Repeat until all is used. Top with cheese and Ritz Cracker crumbs and bake until brown about 25 minutes 350 degrees.
