Honey Bunnies
- 4 1/2 cups Pioneer Original or Buttermilk Biscuit and Baking Mix
- 1 cup raisins
- 1 tsp ground cinnamon
- 1 cup low-fat vanilla yogurt or sour cream
- 2 large eggs, beaten
- 1/2 cup honey
- 2 tsp vanilla extract
Preheat oven to 400 F.
-Place biscuit mix, raisins and cinnamon in large bowl, make a well in the center. In another bowl, combine yogurt, eggs, honey and extract. Pour into center of well; stir well to form a ball.
-Turn out on floured surface, knead 8 - 10 times. Roll out to 1/2-inch thick; cut into bunny shapes using a cookie cutter.
-Place on oiled baking sheet; bake for 12 - 15 minutes or until golden brown.
Honey Glaze: Combine 1/4 cup Honey and 2 tablespoons melted butter or margarine; brush over "honey bunnies."
Serve warm or room temperature. Serves 12 - 16.

Easter Bonnets
Easter Bonnets is an interesting recipe from North Dakota. The Bonnet is made out of Pineapple rings, and then the top of the bonnet is a lime Jello mixed with heavy cream. To decorate the brim and hat band you use cream cheese.
