Easter Cookies - a variety of different cookies you can make for Easter.
Honey Bunnies
4 1/2 cups Pioneer
Original or Buttermilk Biscuit and Baking Mix
1 cup raisins
1 tsp
ground cinnamon
1 cup low-fat vanilla yogurt or sour cream
2 large eggs,
beaten
1/2 cup honey
2 tsp vanilla extract
Preheat oven to
400 F.
-Place biscuit mix, raisins and cinnamon in large bowl, make a well
in the center. In another bowl, combine yogurt, eggs, honey and extract. Pour
into center of well; stir well to form a ball.
-Turn out on floured surface,
knead 8 - 10 times. Roll out to 1/2-inch thick; cut into bunny shapes using a
cookie cutter.
-Place on oiled baking sheet; bake for 12 - 15 minutes or until
golden brown.
Honey Glaze: Combine 1/4 cup Burleson's Honey and 2 tablespoons
melted butter or margarine; brush over "honey bunnies."
Serve warm
or room temperature. Serves 12 - 16.
