Easy Homemade Cookie Recipes

On this page is a variety of cookies you can make, from icebox cookies, to Sandies cookies, Snickerdoodles, and more. Most of these cookies do not fit in any other category I have.

Cookie Tips: Most cookies bake quickly and should be watched carefully to avoid over-baking. Check them at the minimum baking time, then watch carefully to make sure they don't burn. It is generally better to under bake them than overbake them.

Cinnamon Crisps

  • 1/2 pound of butter softened
  • 1 cup sugar
  • 1 egg
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder

Cream the butter and sugar until light and fluffy. Add egg; beat well. Sift dry ingredients together. Add to creamed mixture. Chill about 1 hour for easy handling. Roll out on a floured board to 1/8 inch thickness. Cut into desired shapes. Place on ungreased baking sheet. Bake at 350 for 11 to 12 minutes or until light brown. Remove cookies from baking sheet immediately. Cool on wire racks. Store in an airtight container.

Cocoanut Dreams

  • 1 cup margarine
  • 1 cup sugar
  • 1 egg
  • 2 1/4 cup sifted flour
  • 1/2 teaspoon soda
  • 1 cup finely ground cocoanut

Mix in order given.

Make 1 inch balls or smaller and place on greased cookie sheet. Press down with a fork dipped in water. Do not put too close together.

Bake about 20 to 25 minutes in 350 degree oven. About 15 minutes or less if smaller balls are made.

Coffee Cookies

    Butter a cookie sheet. Set the oven at 350°.
    Cream together until very light:
  • 1/2 cup shortening
  • 2/3 cup sugar
  • 2 Tblsp. instant coffee

  • Add:
  • 1 egg, slightly beaten
  • 3/4 cup flour
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 cup chopped nuts

Mix well. Put on the cooky sheet by teaspoonfuls. Bake until the edges are firm and the tops dry (about 12 minutes). Remove from the tim immediately. Makes about 36.
Note: Also delicious without the nuts.

Cowboy Cookies

Cowboy Cookies
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips

Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.

Cream Cheese Drops

  • 1/2 cup shortening
  • 3 oz cream cheese
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 cup sugar
  • 1 cup flour
  • 1 small pkg. chocolate bits
  • Dash of salt

Put the first five ingredients in a bowl and mix. Sift flour and salt into mixture. Add the chocolate bits, mix well. Drop by teaspoon on a lightly greased cookie sheet. Bake 350 for 15 min. Yields 42 cookies.

Fruit Cocktail Cookies

  • 1 cup shortening
  • 1 cup brown sugar
  • 3 eggs, beaten
  • 2 cups drained fruit cocktail
  • 1 tsp vanilla
  • 1 cup raisins
  • 1-1/2 cup chopped nuts
  • 4 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp salt

Cream shortening, brown sugar, and eggs together. Add fruit cocktail, vanilla, raisins, and nuts.
In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, cloves, and salt.
Add flour mixture to the first mixture and mix well. Drop by teaspoonfuls on a greased baking sheet.
Bake 11-12 minutes at 400 degrees.

Honey Cookies

  • 1/3 cup butter
  • 1/2 cup honey
  • 1 egg
  • 1 cup flour
  • 1 tsp soda
  • 1 package chocolate chips.

Mix in order given. Drop on cookie sheet.

Honey-Nut Cookies

  • 1/2 cup shortening
  • 1 egg
  • 1 tsp. soda
  • 2 1/2 cups flour
  • 1 cup honey
  • 1/2 cup sour milk
  • 1/2 tsp. salt
  • 1 cup nuts

Heat oven to 325 degrees. Bake on top rack for 15 to 20 minutes or until golden brown.

My Favorite Cookies

    Sift together:
  • 4 cups sifted flour
  • 1 tsp. soda
  • 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice

Add 1 cup water to 2 cups raisins, boil until liquid is decreased to 1/2 cup. "Cool."

Cream 1 cup shortening and 2 cups sugar. Blend, add 3 eggs one at a time. Beat well after each. Add 1 tsp. vanilla and 1 cup nuts to cooled raisin mixture. Add sifted ingredients.

Blend. Drop by teaspoon on greased cookie sheet. Bake at 400 degrees, 12 - 15 minutes. Yield 60 cookies.

Peasant Cookies

  • 1 cup butter
  • 1 cup sugar
  • 1 Tablespoon molasses
  • 3/4 cup chopped nuts
  • 2 3/4 cups sifted flour
  • 1 tsp. baking soda

Cream butter, blend in sugar and molasses. Add nuts, then sifted dry ingredients. Form dough into rolls and chill thoroughly. Cut into thin slices. Bake on a greased cookie sheet at 350 about 12 to 15 min. Makes 60 cookies.

Note: This is an old fashion cookie that was really popular when I was little. Couldn't wait until mom made them. Nice simple ingredients too.

Potato Chip Cookies

  • 1 c. butter or margarine (softened)
  • 1 c. packed brown sugar
  • 1 cup sugar (or Splenda)
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 c. crushed potato chips
  • 1 6 oz pkg. butterscotch chips
  • 2 1/2 cups flour
  • 1 tsp baking soda

Cream margarine and sugar in bowl until light and fluffy. Add eggs and vanilla. Stir in potato chips, butterscotch chips and sifted dry ingredients. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 for 10 minutes or until brown. Cool on wire rack. 6 doz.

Sandies

  • 1 cup butter
  • 1/3 cup sugar
  • 2 tsp. water
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 cup chopped pecans

Cream butter and sugar. Add water and vanilla. Mix well. Blend in flour and nuts. Chill 4 hrs. Shape into balls or fingers. Bake on ungreased cookie sheet about 20 min. at 325°. Cool slightly and roll in powdered sugar. Makes 3 doz.

Snickerdoodles

  • 1/2 cup butter flavored Crisco
  • 1/2 cup butter
  • 2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/4 cup milk
  • 1/2 tsp baking soda
  • 1.2 tsp salt
  • 1/2 tsp cream of tartar (scant)
  • 3 3/4 cups flour

Cream Crisco, butter, sugar. Add remaining. Make soft plops of dough (use an ice cream scoop) and drop into the following mixture, 5 tbsp. sugar and 2 tsp ground cinnamon and cover by shaking or rolling.

Bake at 375 for 8-10 minutes. Allow to cool for about 5 minutes on cookie sheet before removing.

I make these Snowballs every year now. They have become a favorite Christmas cookie.

Russian Teacakes (or Snowballs)

snowballs or Russian Teacakes
  • 1 cup soft butter
  • 1/2 cup powdered sugar
  • 1 tsp. vanilla
  • 2 1/4 cups flour
  • 1/4 tsp. salt
  • 3/4 cup finely chopped nuts

Put all ingredients in a bowl mix well. Roll into 1 inch balls

Bake 400 for 10 to 12 minutes, let cool for another 10 or 15 minutes and roll in powdered sugar. Let air cool and box them up.

Note: I made these again in 2011 for Christmas Cookie Party.

Russian Rock's Cookies

  • 1 1/2 c. brown sugar
  • 1 c. shortening
  • 3 1/2 c. flour
  • 3 eggs
  • 1 tsp. soda dissolved in 1/2 c. hot water
  • 1 1/2 c. raisins
  • 1 1/2 c. nuts
  • 1 tsp. vanilla

Sift dry ingredients. Mix with remaining ingreients. Drop with teaspoon on greased cookie sheet. Bake at 375 degrees.

Tiger Cookies

  • 1 cup semi-sweet chocolate chips
  • 3 cups sugar frosted flakes, crushed
  • 2 cups sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup soft margarine
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla

Melt chips over low heat. Cream butter and sugar. Add eggs and vanilla and beat well. Add dry ingredients. Fold in frosted flakes. Marble chocolate through batter. Drop on ungreased baking sheet. Bake at 375 for 12 minutes.

Two-Legged-Mouse Cookies

    Sift together:
  • 2 1/4 c. flour, sifted
  • 1 tsp. salt
  • 1 tsp. baking soda

  • Combine:
  • 3/4 c. firmly packed brown sugar
  • 1 cup softened butter or other shortening
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla
  • 1 tsp. milk

  • Beat until creamy, add:
  • 2 eggs

  • Add flour mixture, mix well, stir in:
  • 1/2 c. semi-sweet chocolate morsels
  • 1/2 c. flaked cocanut
  • 1/2 c. raisins

  • Chop and add:
  • 1/2 c. dates
  • 1/2 c. pecan meats
  • 1/2 c. orange slice candy

Drop by level measuring tablespoons onto greased cookie sheets. Bake 10 to 12 minutes at 375 degrees. Makes 4 to 5 dozen 3 inch cookies.

Walnut Balls

  • 1/2 lb of butter
  • 2 cups of flour
  • 2 cups crushed walnuts
  • 5 Tablespoons sugar
  • 2 tsp. vanilla
  • 1 Tablespoon water
  • dash of salt

Cream butter, add sugar, vanilla and water. Mix well. Add flour and salt, mix well. Add crushed nuts. Shape into bite size balls. Bake on ungreased cookie sheet 8 to 10 minutes at 325°. When cool, roll in powdered sugar.
