Pineapple Upside Down Cake

  • 1 pkg. yellow cake mix
  • 1 small can pineapple rings
  • 1/2 brown sugar
  • 1/2 stick butter
  • jar of cherries(optional)

Preheat oven to 325°. Put a deep cast iron skillet with the butter in the oven until it melts. Open your can of pineapple and drain. Use the juice as part of the liquid for the cake mix. Prepare your yellow cake mix.

Take skillet out of the oven, mix the brown sugar in the butter. Place the circles of sliced pineapple in the pan. Put your cherries in the center of each pineapple ring. Pour all the cake batter in. Put in oven. Bake for 35 to 40 minutes. Check with a toothpick. If it comes out clean, then the center is done.

Take the skillet out of the oven, let it cool for 10 minutes, then carefully place a large plate on top of the skillet and flip it over. This makes a deep cake. Using a cast iron skillet works best, but if you don't have one then just use a deep heavy skillet. Also try using a circular mold like a Bundt pan or angel food cake pan.
