How to Fry Fish
Fried Fish, is probably my most favorite dinner recipes. And whenever we go out to eat, chances are I'll order Fish and Chips.Frying fish is easy to do, and there are many different ways of doing it. My mom use to just coat the fish pieces in flour, and fry them over medium heat in a skillet with a little oil, turning after brown on one side.
There are several other ways you can bread them though. My friend dips the fish in egg, and then in a mixture of flour and bread crumbs. Some people also like to use a batter, and beer batter was popular at one time.
The main thing is, not to let the fish get overdone or underdone. So it does take a little practice.
Pan Fish in Deep Fat
This is a very good way to cook smelts, trout and other small fish. Clean as usual, removing the fins and tails. The head may be left on. Dust with salt and pepper, roll in crumbs and fry in deep Mazola. Serve with cress or parsley, lemon, and Shoe String Potatoes.

Make your own Tartar Sauce
Long John Silver's Fish Batter
- 1 egg white
- 3 tsp. baking powder
- 1 Tbsp. oil
- 1 tsp. salt
- 1 c. flour
- 3 1/2 lbs. fish or chicken
Beat egg white until stiff, mix remaining ingredients with 3/4 cup water, then add to egg white.
