Gingerbread Recipes for the Holidays

I don't make gingerbread very often, but when I do, I'm reminded of the unique flavor of old fashion goodness. Gingerbread is a real old time treat. Will it regain it's popularity again like back in the olden days? I'm not sure, but making gingerbread men, gingerbread houses and gingersnaps are still all-time holiday favorites.

Here's several different varieties of gingerbread cakes and cupcakes collected from my old recipe books. Most are from old church cookbooks.

Old Fashion Gingerbread

  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 1 egg
  • 1/2 cup molasses
  • 1 3/4 cups flour
  • 1/2 tablespoon ginger
  • 3/4 tsp. salt
  • 1/2 tsp. soda
  • 1/4 tsp. cinnamon

Cream the butter, add sugar gradually, egg well beaten, molasses, and flour mixed and sifted with ginger, salt, soda, and cinnamon. Chill, roll in sheets to one-fourth inch in thickness, bake on a buttered sheet at 350, and cut in squares.

Gingerbread Cupcakes

  • 1 cup molasses
  • 1/3 cup butter
  • 1 3/4 tsp. soda
  • 1/2 cup sour milk
  • 1 egg - well beaten
  • 2 cups flour
  • 2 tsp. ginger
  • 1/2 tsp. salt

Put butter and molasses in saucepan and cook until boiling point is reached. Remove from heat, add soda, and beat vigorously. Then add milk, egg, and remaining ingredients mixed and sifted. Bake at 350 fifteen minutes in buttered small cupcake pans, having pans two-thirds filled with mixture

Fairytale Gingerbread

  • 1/2 cup butter
  • 1 cup light brown sugar
  • 1/2 cup milk
  • 1 7/8 cups flour
  • 2 tsp. ginger

Cream the butter, add sugar gradually, and milk very slowly. Mix and sift flour and ginger, and combine mixtures. Spread very thinly with a broad, long-bladed knife on a buttered pan. Bake in a moderate oven at 350°. Cut in squares before removing from pan. Watch carefully and turn pan frequently during baking, that all may be evenly cooked. If mixture around edge of pan is cooked before that in the center, pan should be removed from oven, cooked part cut off, and remainder returned to oven to finish cooking.

Ginger Cake

  • 5 Tablespoons shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup molasses
  • 1 tsp. soda
  • 1/2 cup sour milk
  • 1 3/4 cups flour
  • 2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. salt

Cream shortening sugar, and egg together. Stir in molasses. Dissolve soda in the sour milk. Mix and sift flour with other dry ingredients. Add alternately with the sour milk to the first mixture. Turn into a greased shallow pan. Bake in hot oven 400 for 25 to 30 minutes. Serve with hot whipped cream.

English Christmas Gingerbread

  • 1 lb. flour
  • 1 cup sugar
  • 1 tablespoon ginger
  • 1 tsp. salt
  • 1/2 lb. butter
  • Molasses

Mix flour, sugar, ginger, and salt. Work in butter, using tips of fingers, and add just enough molasses to hold ingredients together. Let stand overnight to get thoroughly chilled. Roll very thin, shape, and bake in a 350 moderate oven until done.

Gingerbread Shortcake

  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. ginger
  • 2 tsp. cinnamon
  • 1/3 cup shortening
  • 1/2 cup sour milk
  • 1 egg
  • 1 cup molasses
  • 1 cup heavy cream

Sift together the dry ingredients. Heat to boiling the molasses and shortening. Add the milk and egg to the dry ingredients and stir quickly into the hot molasses mixture. Bake in a 375 oven 20 to 25 min, in two greased 8 inch layer pans. Cool and cover with whipped cream to serve.

Hard Sugar Gingerbread

  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 3/4 cup milk
  • 5 cups flour
  • 3/4 tablespoon baking powder
  • 1 1/2 tsp. salt
  • 3/4 tablespoon ginger

Cream the butter, add sugar gradually, milk, and dry ingredients mixed and sifted. Put some of mixture on a cookie sheet and roll as thinly as possible to cover pan. Mark dough with a coarse grater. Sprinkle with sugar and bake in a moderate oven 350 for 20 min. Before removing from pan, cut in strips four and one-half inches long by one and one-half inches wide.
