Canapes are made by cutting bread in slices one-fourth inch thick, and cutting slices in strips four inches long by one and one-half inches wide, or in circular pieces.

Then bread is toasted, fried in deep fat, or buttered and browned in the oven, and covered with a seasoned mixture of eggs, cheese, fish, or meat, separately or in combination.

Canapes are served hot or cold at a dinner or luncheon.

Hot Crabmeat Canape

1/2 lb crabmeat
6 Tbsp. mayonaisse
1/2 tsp. salt
1/2 tsp. Accent
2 Tbsp. lemon juice
1 Tbsp. Worcestershire sauce
1/2 c. Parmesan cheese
1 tsp. grated onion
Paprika

Mix together first 8 ingredients. Pile mixture on toast rounds or Melba rounds and sprinkle with Paprika. Place under broiler until bubbly and slightly browned. Makes about 3 dozen.

Cheese Canapes

Toast circular pieces of bread, sprinkle with a thick layer of grated cheese seasoned with salt and cayenne. Place on a tin sheet and bake until cheese is melted. Serve at once.

Cheese and Olive Canapes

Cut stale bread in one-fourth inch slices. Shape with a small oblong cutter with rounded corners. Cream butter, add an equal quantity of soft cheese, and work until smooth; then season with salt. Spread on bread and garnish with a one-fourth inch border of finely chopped olives and a piece of red or green pepper cut in fancy shape, in centre of each. To be served in place of sandwiches on a plate covered with a doiley.

Party Sandwiches

Color cream cheese with liquid coloring as a filling for a dainty rolled sandwich or sliced triple layer finger sandwiches. Also see Refrigerated Biscuits Recipes

Blender Chicken Spread

1 cup cooked chicken
1/4 cup mayonaise
1 thin slice onion
1/2 cup celery chunks
1/4 cup chopped green pepper
1/2 tsp salt
dash of Tabasco

Put all ingredients in the blender. Cover. Press button 7 for 30 seconds, stopping to use spatula when necessary. If a creamier texture is desired, press button 13 for 20 seconds. (Recipe from 1970)

Club Sandwiches

Arrange on slices of bread thin slices of cooked bacon; cover with slices of cold roast chicken, and cover chicken with Mayonnaise Dressing. Cover with slices of bread

Windsor Sandwiches

Cream one-third cup butter, and add one-half cup each of finely chopped cold boiled ham and cold boiled chicken. Season with salt and paprika. Spread mixture between thin slices of bread.

Chicken Sandwiches

Chop cold boiled chicken, and moisten with Mayonnaise or Cream Salad Dressing; or season with salt and pepper, and moisten with rich chicken stock. Prepare as other sandwiches.

Chopped Ham Sandwiches

Finely chop cold boiled ham, and moisten with Tartar Sauce. Spread between thin slices of buttered bread.
